In this video, David explains why you should get Cava and make use of that $65 next time you're shopping for bubbles.

Like a bottle of bubbly champagne Cava is prepared into a white wine grape made by combining two red grapes; the Cava Gran Reserva, for example, includes Chardonnay Pinot Noir grapes. Like champagne, it undergoes a fermentation process in the bottle just like champagne does, and the Gran Reserva is matured for at least 30 months to develop toasted, nutty, and aesthetically pleasing bubbles. Cava, from the Spanish cava, means "cellar" or "underground," highlighting the significance of aging to the beverage.

Born in Los Angeles and raised in Washington, DC- David has spent the last decade working in the wine industry. As the proprietor of Pearson's Wine & Spirits, one of the largest and oldest wine stores in the country, he was able to indulge his interest in wine. He became more involved in the wine business on the wholesale and import levels.

After learning the ins and outs of the wine business, David was honored with the Merite Agricole from the French Ambassador and the French Republic in 2012 for his contributions to French wine. Jurade of Saint Emilion is the oldest wine society in Bordeaux. He bases the entire concept of Magna Carta on his admiration of Bordeaux.
